I love pizza. And sometimes, you know, we've been known to grab one after a long day. Along with it, we always order some cheesy bread. Cheese plus bread. I can't imagine where you can go wrong there. (Wait, actually I can, hence eating grain free ... I digress ...)

If you are looking for quick, comforting, everyone-likes-it kind of dish that you can whip up quickly with minimal fuss with ingredients you have on hand. Well here you have it.
It almost sounds too good to be true.
Oh wait, and we'll throw in, for no extra charge, that it is made with the little-goes-a-long-way-and-therefore-much-more-affordable coconut flour too!
In all seriousness, this recipe is very easy (relatively as compared to most grain free cooking that is!) And it's made all with ingredients I keep on hand (mozzarella cheese, egg, coconut flour, seasoning, pizza sauce.)
It almost sounds too good to be true.
Oh wait, and we'll throw in, for no extra charge, that it is made with the little-goes-a-long-way-and-therefore-much-more-affordable coconut flour too!

But here is the real test: did kiddo like it? Or was she able to tell this was not the "real deal"?
I'm so happy to report that she not only liked it, but she actually ate almost half of the batch herself. At first she said, "We will save some to share with daddy." Later she amended herself, "We can eat it all if we are hungry, right?"
I loved it too. There was only a slight coconut flavor to it (very, very slight but I'm sensitive to these things. I doubt anyone who was dunking it in sauce and unaware would pick up on it.)
I did use my Italian grinder on the garlic sauce (yum!) and next time I will use it in the "dough" as well. I am so excited to try her modified version of this for stromboli which you can see here. =)

Experience: This is a pretty straight-forward recipe which is refreshing amidst the usual lineup of grain free cooking. You need a microwave (or you could use a double broiler), a bowl, a cookie sheet, and an oven. It took me about ten minutes total from pulling ingredients out of the fridge to sticking it in the oven. And about fifteen minutes to bake. In total from start to finish, under half an hour! =)
