My daughter has been all about ice-cream here lately. I have no idea especially considering that it is now Autumn and growing cooler.
However, she has been wanting ice-cream and when she asked today I thought of this delicious-looking recipe I saw, once again, on Maria : Mind, Body Health.

Now I will be upfront that just in skimming over the ingredients and directions I knew this recipe was going to be a bit time consuming and messy. It certainly did not let me down on that aspect :)
I will also add that the pictures here are not nearly as yummy looking as the ones on her blog. My chocolate layer didn't work very well (and made a tremendous mess as well.) However they were yummy so read on! :)

You make these in three layers. The first layer is the ice-cream layer.
Kiddo was very interested in helping with the first layer. (She later lost steam with the project.)
Honestly, one thing I may do in the future is just make the ice-cream layer on it's own. It's super yummy with on-hand ingredients and not overly complicated. It's the three layers that makes this recipe so much work! :)
The second layer was about the time kiddo quit me. That was okay though. I was jamming away to the "Throwback Thursday" playlist on Spotify and having a fantastic time destroying the kitchen until ... oops! I burned the caramel layer. And you know how much I hate wasting good quality (read: pricey) grass fed butter.
I was disappointed. I was doubly disappointed because I had actually read commenters mentioning this and so I should have probably paid better attention.
Oh well. I washed out the pan and started in again on a second batch. I would say the "trick" here for me was not to "bring it to a boil" (which in my mind means leave it alone until it boils) but rather whip it vigorously until it is smooth.

The third layer was the layer that simply did not work for me. I think it was way too much heavy cream which resulted in the chocolate being too thin. Even after it sat in the freezer for hours it was still a bit liquid-y. If I were to make this again I would definitely reduce the cream in the chocolate mixture.
Another thing I would do next time is break this into 24 muffin cups instead of 12. I ended up making a horrendous mess. I literally had to clean the entire freezer out because the runny chocolate was, um, runnier than I expected.
However these were really, really yummy! And I had to substitute a few things (sunflower seeds for the peanuts/almonds, chocolate & peanut butter protein powder for the vanilla). None the less I think these came out really great and I enjoyed eating mine. Although they were so messy (mostly that third layer again) that I did end up eating it in a bowl with a spoon. That's okay I like ice-cream just about any way. :)

Experience: You need to be committed for this recipe. I am aware that this is not an "everyday" thing you make. But even with that in mind you will be using: two pans, a mixer, a food processor, two cupcake pans, 24 silicon cupcake cups, many additional bowls, and every measuring utensil you have. Your first run this may take you up to an hour to make. And then you still have to wait for them to freeze. (Not to mention adding in time for cleaning the freezer and, um, the entire kitchen and every dish you own.) Nevertheless they are a thumbs up. :)
KIddo's Thoughts: She really liked the first ice-cream layer. She was definitely less interested in the three layers together.
