Okay I will be honest. I didn't make biscuits very often before trying grain free, but I have always loved bacon, egg, and cheese biscuits. In fact, they may be the only "savory" breakfast I've ever really, truly loved.
I really, truly needed a grain-free bread recipe to work out. After having quite a few disasters you start to get really discouraged and frustrated. Frustration does not lead to happiness with sticking with an eating plan or motivation to try new things.

So when I read comments like "these taste much better than the traditional biscuits" and "OMG! These biscuits are amazingly great!" I decided to take the risk and try this recipe with the hope that they would turn out.

So we get home, kiddo is napping, and I'm hungry.
The idea of these biscuits come to my mind ... and then the idea of turning them into a bacon, egg, and cheese biscuit dawns on me and before I know it I'm pulling ingredients out of the fridge.
The preparation, other than whipping egg whites, was fairly straightforward. I actually love making pie crusts so I really enjoyed kneading the butter into the dough.

Or maybe more importantly, does it live up to all the hype?
The answer, more or less, is yes!
It had a very biscuit-y texture which was a pleasant surprise. The texture was maybe a bit more spongey than a biscuit but I did not find it very noticeable (especially when it was topped with yummy fillings!)

The one thing I really do not like about a lot of grain-free breads is the "eggy flavor." If you've ever made any then you know what I am talking about.
I am only a moderate egg fan to begin with, but I personally do not think "bread" should taste like eggs. Blech!
With that in mind I was paying very close attention to the taste of these biscuits because the dough definitely has a lot of egg whites in them.
I will say I did notice a subtle egg taste to them when I ate one plain. (Yes I was nibbling straight off the pan. No judging. :) )
While it was there I found it very subtle. Not at all like previous grain-free breads I have tried that scream "eggs!!!"
And once I added the toppings I did not taste it at all. Of course, I was eating egg on it! But I have to imagine that topped with gravy or a no-sugar jam you wouldn't notice either.

I definitely would NOT say that I like these even better or they are "just like KFC (or homemade) biscuits." They have a very slight egg taste and just a bit of an egg texture.
However they do taste pretty darn amazing. And with toppings I'm not really sure you could tell a huge difference. This will definitely be going into my recipe book!
Being made in a muffin pan, these are a bit small for sandwiches. I made and ate two for myself and I'm pretty sure that was still smaller than those jumbo biscuits you can get. However these two "little" biscuits were very filling. I'm amazed at how satisfied I feel after eating meals without grains or sugar.

Experience: You do have to use a mixer for beating the egg whites (unless you want to incorporate exercise in your baking). The mess includes a stand mixer, another bowl, and a muffin tin. Not too bad but definitely a moderate mess. The biscuits were pretty easy to make as long as you feel comfortable whipping the egg whites.
